(Add grilled, sliced chicken breast to use as a complete meal. Add Orange sections if vegetarian.)

1 c mayonnaise
1 avocado – really ripe – mashed.
1 tbsp. lemon juice
2 tbsp. chopped chives
2 tbsp. chopped parsley
1/2 tsp. Worcestershire sauce
1/4 tsp. dry mustard
1/4 tsp. finely chopped garlic
Cherry tomatoes
1 avocado, cut into chucks or slices
Sliced almonds
I egg
1 teaspoon Splenda
1 teaspoon salt

Mash one of the avocados. Mix in lemon juice immediately. Put mayonnaise, mashed avocado, chives, parsley, Worcestershire sauce, mustard and garlic into a food processor, and mix just enough to be creamy.  You can also stream in two tablespoons of good quality olive oil while processing to make dressing easier to pour.

Serve dressing on any salad of cold, crisp salad greens – romaine is a good choice as a base. Add colorful lettuce for interest.

Add slices or chunks of avocado that have been tossed with lemon juice so the avocado will not brown. For color, cherry tomatoes cut in 1/2 are terrific. For more crunch in the salad, add _ stalk of sliced celery and spiced, sliced almonds. ANYTHING left in the refrigerator can be added, too!

Hints:  Serve the dressing at close to room temperature. It tastes best if you don’t take it immediately from the refrigerator to the table.) 

Hint:  To make a large salad for a group, use equal amounts of iceberg lettuce chopped into large pieces along with the romaine.  Iceberg is inexpensive and very refreshing when cold. 

Spiced almonds for salads:  They’re so easy to make your own, rather than spending money to buy!   Beat an egg white and add 1 package (one teaspoon) of Splenda and 1 teaspoon of salt. Toss the almonds in mixture and put them on a baking sheet. Bake in 350 degree oven for about 10 minutes. Watch them, as they will brown quickly. Can be made ahead and kept in an empty jar with a tight lid or a plastic bag – in the freezer.

Irish Raisin Scones


Tap into Irish heritage with these super-simple scones. You’ll Need:

1 cup pastry flour
2 _ tablespoons sugar
1 _ tablespoons butter
_ cup raisins
1 tablespoon baking powder
3 ounces buttermilk

Once mixed, you’ll need:
2 additional ounces of buttermilk
egg yolk

Combine all ingredients into an electric mixer. Mixing on low speed, add the 2 additional ounces of buttermilk and mix until smooth. Roll dough out 1 and _ inches thick. Cut with a round cutter and brush each piece with egg yolk. Bake at 390 degrees for 20 minutes.
